We made a torta paulista, loved by mbh, that we have done with chicken, pork, beef, squash, prawns and heart of palm so its a pretty flexible way to use up leftovers. Plus pretty easy! Kind of like a south american toad in the hole- i cant find therecipe online to link to it so ive taken a photo of our print out.
Basically marinate the left overs & fresh vegin oil & vinegar & herbs while you make the batter & heat a tray in the oven. Once each components ready quickly batter into hot tray marinated bits on top, grated cheese on top of that, tray back in oven. Half an hour, keep the door shut! Ours didnt rise that well coz we used gluten free flour (we both are) but it was really nice. It'll be done again no doubt.
we had enough for lunch the next day too! For the second leftover mega chicken recipe we made a curry - one of our favourites that seems harder to get than eggs or flour atm!
