Day 19: rustling up with the rest of the celeriac

We've been pretty unimadinative so far and as we had a fish pie mix in the freezer (we usually do, its good for so many other things too; pasta risotto, fish stew,curries  paella ...) and should be getting another one tomorrow we thought we'd make a fish pie topped with half and half potato & celeriac mash. 

We fried some leeks, popped them into a bowl & made the bechemal sauce (i wont tell you how coz ours is dairy & gluten free & there are a million instructions and videos out there so GOOGLE!) It is really easy though; 'butter', flour, milk. Pop the leeks back in along with a bay leaf and the fish mix. We also added a coupĺe of 'bricks' of frozen spinach (so handy to add to  soups, pasta & curries ). Pop a lid on and simmer til the fish has cooked. Make the mash with a bit of mustard and transfer the fish mix to your most suitable pan and top with the mash. Fork it up a bit so you have crispy bits and we added some cheese. 
Really yummy and filling and we saved some extra mash for tomorrows breakfast.for todays breakfast we used the last egg (its ok! We had a delivery with some more just before the pie came out!) to make pancakes: never a bad choice! Tomorrow should be a veggie day but it depends what abel & cole bring!
