Day 18: colombian eggs, tuna pasta (inc basic pasta sauce)

MBH was determined to make colombian eggs this morning but as it turned out the avocado wasnt ripe enough. He went ahead anyway and it was still pretty nice. 

Ive not been to colombia but the original recipe from the Guardian says theyre colombian so ı'm going with it. Basically scrambled eggs with pepper, tomato, spring onion and avocado slices. Yummy healthy ish holiday breakfast option especially on some posh toast (which probably isnt an option atm but we can dream).

We were thinking of having hash tonight but 1 egg left and whats hash without eggs? So we've gone full store cupboard for dinner. Tomato tuna pasta, something i lived on when I lived alone. Literally beyond my comprehension why anyone would  buy pasta sauce when its so easy and cheap to make. Fry some onion in garlic oil, when its cooked a bit add chopped  red pepper, a pinch of chilli flakes and a pinch of oregano. Drain the watery  bit from a tin of chopped tomatoes and them add them. Let the sauce simmer while you put the pasta on. Drain and add the tuna to the sauce with parsley and chopped black olives if you have them (we didnt). Once the pasta is done, drain it and add to the sauce & mix well. Top with parmesan once its in the bowl!
