It's the last day of our quarantine, yay!
We have to stay in and noone can come round anyway, boo!
It does mean if my aunty who is in her 80s needs something we can take it round. She is fiercely independant though, and grew up during the war and under rationing - shes got this! As have our simarly aged neighbours over the road, he's been stationed in the far east while she looked after the kids here. They have also got this!
Breakfast: mushrooms on toast, the chickens are on strike or something round here, can't say i blame them tbh. Alternatively stockpilers are planning to make a lot of cakes during lockdown. My thoughtson stockpilers best stay my own or this blog will be certified 18. Oh and a banana!
Lunch: more salami sandwiches to eat up the pack.and crudites.
Dinner: seafood paella ie some actual cooking. Its friday which is usually a fish day. We have paella whether it be fish meat or veg fairly regularly well our probably totally inauthentic version. Make chicken or whatever stock with saffron in. Put lardons/bacon/pork in pan snd bring up tp frying heat : add some oil if needed. Chuck in chopped onion with some salt; we used steenbergs mediterranean salt which is a fairly new addition to our cupboard coz we love their perfect salt. Once the onions cooked a bit put thyme, garlic anda huge pinch of smoked paprika in stir. Next add a chopped red pepper and we added half an aubergine coz it needed eating. Think pretty much anything goes vegetable wise in an inauthentic paella! Its quite a handy dish to use things up! Things dont need to be cooked before you add thenext thing. Chopped tomatoes, chopped tenderstem, rice (you know how much you need) and the stock. Basic rules are twice as much stock as rice. Put the seafood on top (we had half a bag of frozen seafood left), put a lid on, at least til the fish is done and when the rice is almost done chuck in some parsley and squeeze some lemon over. Yum and one pan!
As an aside we have some microgreens growing from my pre lockdown grow your own good life obsession. We'll have outside stuff once it gets nicer. Nothing to see yet!
And also some mushrooms soom hopefully.
