Day 13: dinner. vegan banana blossom green thai curry

Thursday is usually a veggie dinner and we had veg so.... Banana blossom was in a tin obv, we dont have a tropical micro climate here! Its a nice different thing to put in veg curries and the like but i can't get over my initial disappointment that it doesnt look as pretty as it sounds! Luckily we had a jar of thaigreen curry paste before we locked down (finally our spice obsession pays off) so in the fry pan with that, subergine, green pepper, pink onion (one of my fave veg. They'refrom france so we prob wont see them next year boo hoo) mushroom fry veg a bit in turn then banana blossom (well rinsed so it doesnt taste of thectin) and a tin of coconut milk. Simmer til everythings done and its the consistency you want. We hsd plain basmati with it but we put a dried lime leaf in while it was cooking. Coriander and sliced spring onion on top. Grapes after then a vegan magnum. 

Lunch we just had sandwiches today so that didnt seem worth a post! Salami, vegan cheese and burger pickles if youre interested, with crudites on the side and an apple after. And then possibly some chocolate!

To be honest lock down usnt affecting our food yet and now i have way too much time to obsess over it!
